The atmosphere is composed of 20% oxygen, 79% nitrogen, and other gaseous particles and water vapor. Each component exerts some of its pressure on the surrounding environment, collectively called atmospheric pressure, and is measured in Pascals (units Pa). The atmosphere is basically a stable whole except for water vapour, which is constantly changing with weather conditions, especially in relation to temperature. As free water evaporates into the air, the pressure of the water vapor in the atmosphere increases, creating a barrier against more water vapor entering the air. Air in enclosed spaces, in particular, is rapidly saturated with moisture at a given temperature, and the vapor pressure created by the atmosphere prevents further evaporation of free water.

Australian processors buy shell fruit with 10% moisture content from growers, and the extra drying (cost) has also been passed on to growers. South African processors are accustomed to buying from growers husks with a moisture content of 15% or less, which are pre-dried on-farm using forced room temperature. Processors are responsible for the final quality, drying it to a moisture content of 49% and 6% for shell nuts (1.89%-2% for nuts). The shells are then broken and the kernels are stored, graded and dried to a final kernel moisture content of 1.5%, then vacuum packed and shipped.
